Save this for Rakhi ❤️🧡 These colourful Meethi Boondi are the sweetest little addition to your Raksha Bandhan celebrations, soft, juicy, colourful and soaked in saffron-cardamom syrup. ✨
Whisk together the besan, water and baking soda until you have a smooth, flowing batter. Cover and rest for 15 minutes.
Divide a few tablespoons of batter into separate bowls and tint with red, orange and green food colour.
Meanwhile, add sugar, water, saffron and cardamom to a saucepan. Bring to a boil until the sugar dissolves, then add lime juice and set aside.
Heat oil over medium heat. Hold a boondi jhara over the oil and gently pour the batter over it, allowing tiny droplets to fall into the hot oil. Fry for about 30 seconds, then remove. Repeat with the coloured batters.
Add the warm boondi to the saffron-cardamom syrup and let it soak up all that sweetness. Finish with pistachios and saffron. ❤️🧡
