If kimchi and roti had a very delicious love child… this would be it. Crispy on the outside, molten cheese in the middle, spicy, tangy and packed with flavour. This kimchi roti is a Korean-Indian fusion twist on the classic stuffed roti (call it a kimchi paratha with attitude), and honestly… it works SO well.

Instructions

1. Mix flour, salt, sesame oil and enough warm water to make a soft dough. Rest 15–20 minutes.
2. Combine kimchi, mozzarella, scallions, gochujang and sesame seeds. Mix well.
3. Stuff, seal and gently roll into a roti.
4. Cook on a hot tawa with a little oil or ghee until golden, crisp and ridiculously cheesy.
